Nourishing the body with real food - bone/ meat broth

While eliminating unhealthy foods is a good start to reverse or prevent inflammation, it is just as important to cook nourishing meals to support your body in healing. I am on a journey, trying to figure out my way around it. For example bone broth is a good staple in any traditional culture that has always been used as medicine to build back strength and energy. Ofc there are certain things to consider, for example if you struggle with histamin, then meat broth is better than bone broth, bcs the long cooking of the bones releases more histamin and could potentially trigger a person, same goes for ppl that have SIBO or a leaky gut. There are different opinions though.

Alhamdulillah I am a big fan of bone broth and I find it gets most gelatenous with feet, whether chicken feet or a cow foot. In the picture is the latter, that's how clean it gets after I briefly soaked it in vinegar and washed it with salt water.

Then I boil it, throw away the first water, than boil it again on high heat. Then I turn off the heat and add the veggies and let it simmer for hours. I prefer this method over the roasting method, bcs those crispy burned spots are carcinogenous and age your skin faster than water-based cooking. I am still undecisive whether to add all the seeds (pepper, juniper, fennel, milk thistle, fenugreek, cilantro seeds and also dried mushrooms) or to just keep it simple.

It definitely affects the taste and I am the only one who isn't bothered by it, so I now just stick to simply:

  • pepper corns

  • fennel seeds

  • bay leaf

  • fresh turmeric

  • fresh ginger

What do you prefer?

As for meat broth, I love to steam the meat and eat it seperately. I put cabbage, onions, carrots, cellery stick, apple etc. in a pot and then I only pour enough water, so that the meat can sit on top of the veggies and gets steamed. I like placing ginger slices on top of the meat bcs it removes this animal taste. After about 40min the meat is done and I take it out of the pot, as well as the ginger slices (those get thrown away).

Then I add only the bones and fat back to the pot. Now I pour hot water all the way to the top. Letting it boil on low heat for 4h or more. I add the salt in the last hour, bcs apparently when adding it in the beginning, you saturate the water with minerals and then less minerals get extracted from the bones.

I have 3 tips to share:

1. Avoid pre-cut veggies and buy the whole celleriac/ cellery /carrots etc instead. Then just cut it into cubes and freeze the excess.

2. Freeze the stock/broth, so that you always have it available.

3. Cook your rice with the broth to add nutrients to it.

What are your go to methods to make food more nourishing? I am struggling the most with breakfast ideas.
